Two-Time Chili Champion
Another successful chili cook-off took place last Sunday here at St. John's. The reigning champion, Ed Owens, took home the coveted red chili trophy for a 2nd time — Congrats! Many thanks to Will Davenport, Lonnie Brown, the Deming family, Doug Ayers, Debby Hopkins and the Bartz family for participating in the fun competition, too.
The challenge is on for next year to beat Ed! Here's his recipe, can you dig it?
- 2 lbs of coarse ground beef (He grinds his own round roast)
- 1 large onion, chopped
- 4-6 cloves fresh garlic, chopped
- 1/3 bottle of Chili Blend , approximately 2-3 tbsp (A perfect blend of chili pepper, paprika, salt, cumin, oregano, and garlic)
- ½ tsp comino seeds
- 1 can diced tomatoes
- 1 small can tomato sauce
- 2 tbsp tomato paste (or the entire small can)
- 2 cups of beef stock (may or may not need more liquid)
- Salt and pepper, to taste
Method:
- Brown meat in olive oil with onions and garlic in skillet in two or three portions, dusting each with flour at the end to absorb any grease.
- Add to stock pot with beef stock and beer, to taste.
- Deglaze pan with red wine and pour into pot.
- Add tomatoes, sauce, and paste stirring frequently.
- Add the seasonings and stir.
- Heat to medium high then turn down and cook slowly for awhile.
